Europe: KMC introduces potato starch-based glaze for baked goods

KMC launches cost-effective and non-allergenic alternative to traditional egg wash and dairy-based bakery glaze KMC GlazeMaker 25 that provides shine and adhesion.

To give an appealing surface to baked goods, the bakery industry has traditionally used egg wash or dairy-based glaze.

However, price volatility and instable supply of egg products in certain parts of the world and in particular the recent situation in Europe following the new cage legislation, calls for new alternative solutions.

The ingredient is made of potato starch and does not require heating – the powder is added directly into water at room temperature.

The solution is ready for use after a few minutes and it can be kept for several hours without refrigeration.

The solution is applicable by brush as well as spray and it may be added either before or after baking – or both.
